FOUR YEARS – ROAD JUNCTION CAKE


 
80ml drinking chocolate 4 egg quantity of basic cake mixture 2 chocolate finger biscuits
90ml hot water 200g quantity butter cream 2 red, orange and green gum drops
4 candle and car-shaped holders Roasting tin 30cm by 20cm  
 
  1. Set oven at 180 degree C.
  2. Make a paste of chocolate and water.
  3. Make cake mixture and fold in half the chocolate paste before adding flour.
  4. Bake in tin for 40 minutes until firm and springy in center.
  5. Use remaining chocolate to color two-thirds of butter cream.
  6. Cut cake lengthwise in two to give two strips 10cm wide.
  7. Cut a generous square off end of one strip.
  8. Place larger pieces in an L shape.
  9. Cut small square in half and use to complete number.
  10. Join cakes together with butter cream (but do not split and fill).
  11. Spread sides with plain butter cream and top with chocolate cream.
  12. Do the edge by piping with rest of chocolate butter cream.
  13. Use a little cream to secure gum drops on flat side of biscuits to make traffic lights.
  14. Place these at road junction and arrange cars on cake.
