FIRE ENGINE CAKE (2)


 
6-egg cake mixture
350 g (12 oz) red Butter icing
2 ice cream wafers


50 gr (2 oz) Royal icing*
3 licorice Catherine wheels
licorice ribbon

licorice allsorts
few smarties
2 sugar bells or candie sweets shaped like bells

 

To make the Fire Engine:

  1. Grease and line two 18 x 28 cm (7 X 11 inch) shallow baking tins.
  2. Turn the mixture into the tins
  3. bake in a preheated moderate oven, 180C (3500F), Gas Mark 4, for 30 to 35 minutes.
  4. Turn onto a wire rack to cool.
  5. Following diagram 1, cut a 2.5 cm (1 inch) wide strip off the length of each cake;
  6. cut each strip into 2 pieces, 18 and 10 cm (7 and 4 inches) long. Place one cake on a board.
  7. Cut two 5 cm (2 inch) pieces off the other cake (see diagram 2),
  8. leaving an 18 X 15 cm (7 X 6 inch) piece.
  9. Place this piece on the large cake and put the 5 cm (2 inch) strips crosswise on top (see diagram 3).
  10. Place a 10 cm (4 inch) strip on each side, towards the rear.
  11. Place the longer strips on top and round off the corners (see diagram 4).
  12. Sandwich all the pieces together with red icing,
  13. then cover the cake with the remaining icing.
  14. Shape the wafers to make windows and position on the front and sides of the cab.
  15. Put the royal icing into a piping bag, fitted with a No. 2 writing nozzle.
  16. Pipe outlines for the windows, doors, wheel hubs etc. as shown.
  17. Position licorice ribbon for the ladders, radiator grill, bumpers, etc, as shown.
  18. Use Catherine wheels for the hoses and licorice allsorts for the wheels and road markings.
  19. Position the sugar bells on top on licorice sweets, and smarties at the front and back to resemble lights.
