Individual Salami
and Cottage Cheese Flans

pastry: |
5 oz shortcrust pastry (bought frozen or made yourself) |
Filling:

- 2 oz salami, skinned and finely sliced
- 1 small onion, grated
- 1/2 level tsp mixed dried herbs
- 8 oz cottage cheese
- 2 eggs, beaten
- Salt and pepper

Decoration:
|
- Tomato wedges
- Sprigs of parsley
|
- Roll out pastry and line four 4 in diameter patty tins, bringing pastry well
up sides of tins.
- Bake blind at 400’F (gas mark 6) for 10 minutes.
- Remove baking beans and paper or foil and cook for a further 5-10 minutes.
- Place a few slices of salami in each flan case.
- Blend together remaining ingredients and spoon over salami.
- Bake at 350’F (gas mark 4) for 20-25 minutes until set.
- Serve garnished with tomato and parsley.
- Can be served hot or cold.
