Individual Salami and Cottage Cheese Flans
pastry:
5 oz shortcrust pastry (bought frozen or made yourself)
Filling:
  • 2 oz salami, skinned and finely sliced
  • 1 small onion, grated
  • 1/2 level tsp mixed dried herbs
  • 8 oz cottage cheese
  • 2 eggs, beaten
  • Salt and pepper
Decoration:
  • Tomato wedges
  • Sprigs of parsley
  1. Roll out pastry and line four 4 in diameter patty tins, bringing pastry well up sides of tins.
  2. Bake blind at 400’F (gas mark 6) for 10 minutes.
  3. Remove baking beans and paper or foil and cook for a further 5-10 minutes.
  4. Place a few slices of salami in each flan case.
  5. Blend together remaining ingredients and spoon over salami.
  6. Bake at 350’F (gas mark 4) for 20-25 minutes until set.
  7. Serve garnished with tomato and parsley.
  8. Can be served hot or cold.
